Personally if i'm being held for a high ransom and i know that I am going to die i would rather kill myself quickly then sit there for days while i die of starvation slowly

Smack your head on a wall, don't breathe, etc.

It's practically impossible to kill yourself by not breathing because of reflexes, and you'd knock yourself unconscious before you died from smacking your head against the wall.
